Pibb's Rib Shack is a food truck run by a husband-and-wife team bringing 20 years of BBQ and soul food cooking experience to New Tampa Boulevard. They slow-smoke ribs, pulled pork, chicken, rib tips, and brisket using a wood combination of oak, hickory, and pecan. Sides are made from scratch: mac and cheese, collard greens made with smoked turkey, and macaroni salad. They also offer smoked turkey pot pies and a range of additional sides including coleslaw, steamed cabbage, green beans, and yellow rice. Baked beans and collard greens are prepared without pork, making options available for different dietary needs. Catering and takeout are available.
